Our speaker Alexis Jefferson will share some healthy lunch ideas with us.
Alexis will share how she began to make changes to her son’s lunches. She will discuss including your children in on making lunches and ways to get them excited about changes. She will discuss both hot and cold options for lunch and ways to pack them. She will also discuss providing a balance of carbs, fats and proteins and how to pair items so they don’t spike blood sugar which can affect energy and concentration.
Alexis is a recent Graduate of Maryland University of Integrative Health. She graduated with a Master of Science in Nutrition and Integrative Health and is currently completing her clinical intern hours toward her CNS certification. Alexis’s journey into the nutrition field began officially about 3 years ago when working in the Information Technology arena as a Program Manager she quit to pursue her degree. However, her curiosity about food and nutrition started much earlier on, as she remembers cooking in the kitchen with her Grandmother as a child, some of the best secrets are learned from just observing! Alexis believes that healthy food has the power to heal, and proper nutrition can help restore the mind body and spirit.
In her spare time Alexis enjoys yoga, reading, cooking with her husband, and enjoying sporting events with her husband and 11-year-old son.
